X11 is necessary for the Gimp to present a graphical interface, which it requires in order to work. I don't expect a more 'up-to-date' version of Gimp to work around this requirement. Perhaps it will work with another X11 environment, but it is probably designed considering that you'll be using the Apple X11 implementation that ships on our install discs.

Most UNIX systems adapted X-Windows as their GUI environment. One key feature of X-Windows is the ability to separate the X-Window based applications from the X-Window display device over a network. So it is very common for an X-Window user to have windows open on their workstation originating from any number of different systems. X11 is an X-Window package for Mac OS X provided by Apple.
For the most part it is there to make it easy for UNIX based uses to use Mac OS X as an X-Window display server. By this I mean that only X-Window developed applications can display on X11, you can NOT use X11 to remote any native Mac OS X applications. Having said all of that, I am a heavy user of X11.
